Cooking Broccoli Cheddar Soup

Hello!

I made dinner for some of my family recently, and I made a copycat Panera broccoli cheddar soup. We’ve made the recipe before, but it was my first time making it. It turned out pretty good. I also made homemade croutons using old sourdough bread that we had, to go along with our salads, which my mom prepped. I was stressed during parts of it and we ate later than I wanted, I should’ve started earlier, and should’ve prepped and planned better. There was also some stress because of a situation with the chicken stock that we had and because of some other stuff. Overall it wasn’t the most fun or peaceful dinner I’ve made. I’ll share some more about the soup below.

What was something you enjoyed about doing this recipe or liked about the final result? I liked how soft the broccoli got! I probably should’ve cut it smaller, which I think I foresaw when I was cutting it, but the broccoli was still really good.

What was something you disliked about this recipe or the final result (if anything)? It turned out pretty grainy, which wasn’t great. I don’t think it was that grainy the last time that we’ve made this (or the last couple times, not sure if we’ve made it once or twice before). There’s a few things I did that might have affected this though.

What’s something you might tweak about the recipe or try differently next time? I’d try some things to make it less grainy, maybe not adding milk when combining the butter and flour at the beginning, which it said you could do if needed, to keep the flour from burning, but that might have made it more grainy. I’m not sure though. Also stirring it better and more at times, and I don’t know if this had to do with it being grainy but I should’ve been better about making sure it was simmering properly when it should’ve been, which might have involved looking stuff up online. It got kind of airy eventually, which maybe was okay, but I don’t think I was doing what I should’ve been.

Thank you for reading!
