Baking Homemade Sourdough Pop-Tarts

At our homeschool co-op this week, for baking class, we made homemade sourdough Pop-tarts! We had to bring in whatever jam or filling we wanted too, and I ended up making a homemade quick strawberry jam for it the day before.

What was something you enjoyed about doing this recipe or liked about the final result? I like how they turned out, the actual crust is super flaky and had good flavor and texture, the homemade strawberry jam was really delicious, and the glaze was nice too. I really enjoyed making the jam as well, and the flavor of that! I used frozen strawberries that we picked this summer.

What was something you disliked about this recipe or the final result (if anything)? I wish I would’ve had a bit more jam, maybe I ended up reducing it down too much, or maybe I should have started with more of the ingredients or something. I don’t think I had a full cup like the recipe called for. It ended up being fine, the amount of jam in the Pop-tarts was still good. But I could have used more, and I ended up using some jam from a friend for one of them, and I ended up throwing a bit of dough away, which I could have used if I had more jam, although I could have taken some out of the others.

What’s something you might tweak about the recipe or try differently next time? I’d probably have some more jam for the filling.

The recipe is mainly the Sourdough Pop-tart recipe from Lisa Bass on Farmhouse on Boone, we changed a few things but it’s pretty similar.
